Mediterranean Doner Kebab with Spicy Red Schug Sauce

Ingredients for Doner Kebab:

  • 1 lb lean beef or lamb, thinly sliced

  • 2 tsp ground cumin

  • 2 tsp ground paprika

  • 1 tsp ground coriander

  • 2 garlic cloves, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 4 pita bread or flatbreads

  • 1 medium red onion, thinly sliced

  • 1 tomato, sliced

  • 1/2 cucumber, sliced

  • Fresh lettuce leaves

  • Pickles

Ingredients for Spicy Red Schug Sauce:

  • 5-6 red chili peppers, stems removed

  • 4 garlic cloves

  • 1/2 cup fresh cilantro, chopped

  • 1/2 cup fresh parsley, chopped

  • 1 tsp ground cumin

  • 1/2 tsp ground cardamom

  • 1/4 tsp ground cloves

  • 3 tbsp olive oil

  • Salt to taste

  • 2 tbsp lemon juice

Instructions:

1. Preparing the Doner Kebab:

  • In a large mixing bowl, combine beef or lamb slices with cumin, paprika, coriander, minced garlic, salt, and pepper. Mix until the meat is well-coated with the spices.

  • Allow the meat to marinate for at least 2 hours, or overnight for best results.

  • Heat a skillet or griddle over medium-high heat. Once hot, add the marinated meat slices and cook until browned and cooked through.

  • Warm the pita or flatbreads.


2. Preparing the Spicy Red Schug Sauce:

  • In a food processor, combine red chili peppers, garlic, cilantro, parsley, cumin, cardamom, and cloves. Process until a coarse paste forms.

  • With the processor running, drizzle in the olive oil until well combined.

  • Season with salt and add lemon juice. Process again to mix.


3. Assembling the Sandwich:

  • Lay out a pita bread and place a generous amount of lettuce leaves on it.

  • Top with cooked meat, followed by slices of red onion, tomato, pickles and cucumber.

  • Drizzle with a generous amount of spicy red schug sauce.

  • Fold the pita over the fillings and serve hot.
